French Toast Casserole

Ingredients
  

Main Ingredients
  • ½ loaf ½ a loaf of French bread (about 8 oz), cut into cubes Use stale bread for better texture.
  • ½ cup ½ cup butter
  • 1 cup 1 cup packed brown sugar
  • 6 pieces 6 eggs
  • 2 cups 2 cups milk Almond milk can be used for a vegan option.
  • 2 teaspoons 2 teaspoons vanilla extract
  • 2 teaspoons 2 teaspoons cinnamon (divided) Can be adjusted to taste.
  • 1 tablespoon 1 tablespoon brown sugar (for topping)
  • to taste Powdered sugar for topping (optional) Optional but recommended for serving.

Method
 

Preparation
  1. Preheat your oven to 425°F.
  2. Butter a 13x9 inch baking pan and set it aside.
  3. In a small saucepan over medium heat, melt the butter. Once melted, stir in brown sugar until smooth.
  4. Pour the butter and sugar mixture into the bottom of your pan and spread it evenly.
  5. Add the bread cubes, spreading them over the top of the buttery goodness.
  6. In a medium bowl, whisk together the eggs, milk, vanilla, and 1 teaspoon of cinnamon. Pour this mixture over the bread cubes.
  7. Sprinkle with the remaining cinnamon and 1 tablespoon of brown sugar.
Baking
  1. Bake in the preheated oven for 25–30 minutes until the top is golden brown.
  2. Remove from oven and sprinkle with powdered sugar if desired.

Notes

Store leftovers in the fridge for about 3–5 days. Can be frozen for up to 3 months. To reheat, pop it in the oven at 350°F for 15-20 minutes.
