Ingredients
  

Dry Ingredients
  • 1.5 cups gum-free gluten-free flour blend
  • 0.25 teaspoon xanthan gum (optional)
  • 1.5 teaspoons baking powder
  • 0.25 teaspoon baking soda
  • 0.5 teaspoon kosher salt
  • 2 tablespoons granulated sugar (or up to 1/4 cup for sweeter pancakes)
Wet Ingredients
  • 1 each egg (at room temperature, beaten)
  • 1.25 cups milk (at room temperature)
  • 1 teaspoon pure vanilla extract (optional)
For Cooking
  • Neutral cooking oil (for greasing)

Method
 

Preparation
  1. In a mixing bowl, whisk together the gluten-free flour, xanthan gum, baking powder, baking soda, salt, and sugar until well combined.
  2. In another bowl, mix the beaten egg, milk, and vanilla extract.
  3. Gently combine the wet and dry ingredients until just blended.
Cooking
  1. Heat a little oil in a pan over medium heat.
  2. Pour the batter and cook until bubbles form, then flip and cook until golden.
  3. Serve stacked high with toppings of your choice, such as maple syrup, butter, or fresh berries.

Notes

For best results, use room temperature ingredients and avoid overmixing the batter. Customize the pancakes with your favorite flavors.
