Main Ingredients
  • 2 large oranges
  • 1 cup pistachios, shelled Toast slightly before grinding to enhance flavor.
  • 1 cup almonds, ground
  • 1 cup sugar Can substitute half with honey for a sweeter twist.
  • 6 large eggs Can substitute with flax or chia eggs for a vegan option.
  • 1/2 teaspoon baking powder
  • Powdered sugar for dusting

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and line a round cake pan.
  2. Boil the whole oranges in water for about 2 hours until soft and let them cool.
  3. In a food processor, blend the cooled oranges (with skin) until smooth.
  4. In a mixing bowl, combine the orange puree, ground almonds, ground pistachios, sugar, and baking powder.
  5. Beat in the eggs one by one until well mixed.
Baking
  1. Pour the batter into the prepared cake pan and smooth the top.
  2. Bake for about 40-45 minutes or until a skewer comes out clean.
Cooling and Serving
  1. Allow to cool in the pan for 10 minutes before transferring to a wire rack.
  2. Dust with powdered sugar before serving.

Notes

Store in an airtight container in the fridge for 3-5 days, or freeze for up to 3 months. Thaw in the fridge overnight.
