Preparation
- Preheat your oven to 350°F (175°C) and grease and line a round cake pan.
- Boil the whole oranges in water for about 2 hours until soft and let them cool.
- In a food processor, blend the cooled oranges (with skin) until smooth.
- In a mixing bowl, combine the orange puree, ground almonds, ground pistachios, sugar, and baking powder.
- Beat in the eggs one by one until well mixed.
Baking
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for about 40-45 minutes or until a skewer comes out clean.
Cooling and Serving
- Allow to cool in the pan for 10 minutes before transferring to a wire rack.
- Dust with powdered sugar before serving.
Notes
Store in an airtight container in the fridge for 3-5 days, or freeze for up to 3 months. Thaw in the fridge overnight.
