  3. In another bowl, whisk the eggs, Greek yogurt, honey or maple syrup, melted coconut oil or butter, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry mix. Stir until just combined. Be careful not to overmix; a few lumps are completely fine.
  5. Pour the batter into the prepared cake pan, spreading it evenly with a spatula.
Baking
  1. Place the pan in the preheated oven and bake for about 25-30 minutes or until a toothpick inserted into the center comes out clean.
