Preparation
- Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan with cooking spray or line it with parchment paper for easy removal.
- In a large mixing bowl, combine the almond flour, baking powder, ground cinnamon, ground cardamom, ground ginger, nutmeg, cloves, and salt. Whisk together until the ingredients are well incorporated.
- In another bowl, whisk the eggs, Greek yogurt, honey or maple syrup, melted coconut oil or butter, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry mix. Stir until just combined. Be careful not to overmix; a few lumps are completely fine.
- Pour the batter into the prepared cake pan, spreading it evenly with a spatula.
Baking
- Place the pan in the preheated oven and bake for about 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Carefully transfer the cake to a wire rack to cool completely.
