Main Ingredients
  • 2 medium apples, peeled and grated (about 200g)
  • 1.5 cups almond flour (150g)
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 1 teaspoon ground cardamom
  • 3 large eggs
  • 0.5 cup granulated sugar (100g)
  • 0.5 teaspoon vanilla extract
  • 0.25 cup unsalted butter, melted (60g)
  • 0.25 cup fresh apple juice (60ml)
Optional Glaze
  • 0.25 cup powdered sugar (30g)
  • 1 tablespoon fresh apple juice (15ml)
  • 0.25 teaspoon ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
  2. In a small bowl, mix the grated apples with the apple juice and set aside.
  3. In a medium bowl, whisk together the almond flour, baking powder, salt, and cardamom.
  4. In a large bowl, beat the eggs and sugar until pale and fluffy.
  5. Stir in the melted butter, vanilla, and apple mixture.
  6. Gradually fold in the dry ingredients until the batter is smooth and well combined.
  7. Pour the batter into the prepared pan, smoothing the top with a spatula.
Baking
  1. Bake the apple almond cake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool fully.
Glazing (Optional)
  1. Whisk together powdered sugar, apple juice, and cinnamon, then drizzle over the cooled cake.

Notes

This cake can be stored in the refrigerator for up to 5 days. Freeze individual slices for up to 3 months.
