Preparation
- Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
- In a small bowl, mix the grated apples with the apple juice and set aside.
- In a medium bowl, whisk together the almond flour, baking powder, salt, and cardamom.
- In a large bowl, beat the eggs and sugar until pale and fluffy.
- Stir in the melted butter, vanilla, and apple mixture.
- Gradually fold in the dry ingredients until the batter is smooth and well combined.
- Pour the batter into the prepared pan, smoothing the top with a spatula.
Baking
- Bake the apple almond cake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool fully.
Glazing (Optional)
- Whisk together powdered sugar, apple juice, and cinnamon, then drizzle over the cooled cake.

This cake can be stored in the refrigerator for up to 5 days. Freeze individual slices for up to 3 months.
