Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a medium mixing bowl, combine the almond meal, baking powder, and salt. Mix well and set aside.
  3. In a large mixing bowl, whisk together the eggs and sugar until light and fluffy.
  4. Incorporate the orange zest and juice into the egg mixture and stir until fully combined.
  5. Gradually fold the dry almond mixture into the wet ingredients until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  7. Bake for 30-35 minutes, checking for doneness with a toothpick.
  8. Allow the cake to cool in the pan for a few minutes before removing it to a wire rack to cool completely.
  9. Dust with powdered sugar just before serving, if desired.

Notes

Room temperature eggs help create a lighter texture. Avoid overmixing to prevent a denser cake. Consider adding a teaspoon of vanilla extract for extra flavor.
