  • 1 piece cucumber Cut into thick slices
  • 4 oz creamy feta cheese For mixing with olives
  • 1/4 cup olives Green or black, pitted and chopped
  • to taste Salt and pepper For seasoning
  • optional Olive oil For drizzling over the bites
  • for garnish Fresh herbs E.g., dill or parsley

Method
 

Preparation
  1. Cut the cucumber into thick slices.
  2. In a bowl, mix the creamy feta cheese and chopped olives.
  3. Spoon a small amount of the feta-olive mixture onto each cucumber slice.
  4. Garnish with fresh herbs and a drizzle of olive oil, if desired.
  5. Sprinkle with salt and pepper to taste.
  6. Serve immediately or refrigerate until ready to serve.

Notes

If you have leftovers, store them in an airtight container in the fridge for 1-2 days. For best flavor and crunch, eat fresh. You can prep the feta-olive mix ahead of time.
