Cheese Mixture
  • 8 oz cream cheese, softened Use room temperature for easier mixing.
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 cup sun-dried tomatoes, finely chopped
For Garnish and Serving
  • 1/4 cup fresh parsley, chopped For rolling the cheese log.
  • Crackers or breadsticks For serving.

Method
 

Preparation
  1. In a mixing bowl, combine the cream cheese, mozzarella, Parmesan, Italian seasoning, garlic powder, and sun-dried tomatoes. Mix until well blended.
  2. Form the cheese mixture into a log shape using plastic wrap. Wrap tightly and refrigerate for at least 1 hour.
  3. Once chilled, roll the log in chopped fresh parsley.
  4. Place it on a platter and serve with crackers or breadsticks.

Notes

For a fancy touch, drizzle some olive oil or balsamic glaze over the top. This cheese log can be made ahead of time and stored in the fridge for 3 to 5 days.
