  • 2-3 medium medium sweet potatoes, peeled and thinly sliced
  • 4 tbsp unsalted butter
  • 2-3 cloves cloves of garlic, minced
  • 1 medium medium shallot, finely diced
  • 1 tsp kosher salt
  • Fresh cracked black pepper To taste
  • 2-3 sprigs fresh thyme
  • 1.5 cups heavy cream
  • 1 cup shredded parmesan cheese

Method
 

Preparation
  1. Preheat your oven to 400 degrees F and lightly grease a baking dish.
  2. Toss your sliced sweet potatoes in a large mixing bowl.
  3. In a small saucepan, melt the butter over medium-high heat. Add in minced garlic and diced shallot, and sauté for about 2-3 minutes until fragrant.
  4. Stir in fresh thyme, salt, and black pepper. Remove it from heat and mix in the heavy cream and parmesan cheese until combined.
  5. Pour the creamy sauce over the sweet potatoes and toss to coat evenly.
  6. Arrange potato slices upright in the prepared baking dish and drizzle any remaining sauce on top.
Baking
  1. Bake for 50-60 minutes or until sweet potatoes are fork-tender.
Serving
  1. Serve immediately, garnished with extra fresh thyme if desired.

Notes
