Ingredients
  

Dry Ingredients
  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup honey
  • 1/4 cup butter, softened
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
Optional Mix-ins
  • 1/2 cup raisins or chocolate chips Optional but recommended!

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the rolled oats, flour, baking soda, and salt.
  3. In another bowl, mix together the honey, softened butter, brown sugar, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ones and mix until just combined.
  5. If desired, stir in raisins or chocolate chips.
Baking
  1. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  2. Bake for 10-12 minutes, or until golden brown.
  3. Allow to cool on the baking sheet before transferring to a wire rack.

Notes

Tip: For firmer cookies, chill the dough for about 30 minutes before baking. You can switch up ingredients, using nuts or coconut flakes for variety.
