Preparation
- Preheat the oven to 350°F (175°C).
- In a bowl, combine the rolled oats, flour, baking soda, and salt.
- In another bowl, mix together the honey, softened butter, brown sugar, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet ones and mix until just combined.
- If desired, stir in raisins or chocolate chips.
Baking
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes, or until golden brown.
- Allow to cool on the baking sheet before transferring to a wire rack.
Notes
Tip: For firmer cookies, chill the dough for about 30 minutes before baking. You can switch up ingredients, using nuts or coconut flakes for variety.
