  • 1 pound sausage (Italian, chicken, or your choice)
  • 2 cups broccoli florets
  • 1 each bell pepper, sliced
  • 1 each red onion, chopped
Honey Garlic Sauce
  • 3 tablespoons honey
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • to taste Salt
  • to taste Pepper
Garnish (optional)
  • Sesame seeds for garnish
  • Fresh parsley for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Slice the sausage into round slices.
  3. Chop the red onion and slice the bell pepper into strips.
  4. Break the broccoli into small florets.
  5. In a small bowl, mix together honey, minced garlic, soy sauce, and olive oil. Season with salt and pepper, then whisk until it’s smooth.
Cooking
  1. Toss the sliced sausage, broccoli florets, bell pepper, and chopped onion into a large mixing bowl. Pour the honey garlic sauce over everything. Use tongs or your hands to coat everything evenly.
  2. Line a large baking sheet with parchment paper or foil for easy cleanup. Spread the sausage and veggie mixture in a single layer.
  3. Bake in the preheated oven for 20-25 minutes. Check for browned sausage edges and tender veggies.
  4. After removing from the oven, sprinkle with sesame seeds and parsley, if using.
  5. Let sit for 2-3 minutes to cool slightly. Serve right from the pan and enjoy!

Notes

For variations, swap sausage for chickpeas or try different sauces like teriyaki or BBQ. Leftovers can be stored in the fridge for 3-4 days and are great for meal prep.
