- In a large pot, heat a little olive oil over medium heat.
- Sauté the onion, garlic, carrots, and celery until they’re softened — about 5 minutes.
- Add the poached chicken breasts and chicken broth, then bring it all to a simmer.
- Stir in the green beans, thyme, and rosemary.
- Season with salt and pepper, and let it simmer for about 20 minutes.
- Remove the chicken, shred it, and return it to the pot.
- Serve hot, garnished with fresh herbs.
Notes
Store in the fridge for 3-4 days or freeze for up to 3 months. Reheat on the stove or microwave.
