  • 2 pieces poached chicken breasts
  • 4 cups chicken broth
  • 2 pieces carrots, diced
  • 2 stalks celery, diced
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • 1 cup green beans, chopped
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • Fresh herbs (parsley or basil) for garnish

Method
 

Preparation
  1. In a large pot, heat a little olive oil over medium heat.
  2. Sauté the onion, garlic, carrots, and celery until they’re softened — about 5 minutes.
  3. Add the poached chicken breasts and chicken broth, then bring it all to a simmer.
  4. Stir in the green beans, thyme, and rosemary.
  5. Season with salt and pepper, and let it simmer for about 20 minutes.
  6. Remove the chicken, shred it, and return it to the pot.
  7. Serve hot, garnished with fresh herbs.

Notes

Store in the fridge for 3-4 days or freeze for up to 3 months. Reheat on the stove or microwave.
