  • 2 cups broccoli florets Keep broccoli bright and crunchy.
  • 2 tablespoons olive oil For sautéing.
  • 3 cloves garlic, minced Adjust to taste.
  • 1/2 teaspoon red pepper flakes Optional, for heat.
  • Salt and pepper to taste
  • Grated Parmesan cheese For serving.

Method
 

Cooking
  1. Cook the whole grain pasta according to package instructions.
  2. Add the broccoli florets during the last 3 minutes of cooking.
  3. Drain the pasta and broccoli and set aside.
  4. In a large skillet, heat olive oil over medium heat.
  5. Add minced garlic and red pepper flakes; sauté for about 30 seconds until fragrant.
  6. Add the drained pasta and broccoli to the skillet, tossing to combine.
  7. Season with salt and pepper to taste.
  8. Serve hot, topped with grated Parmesan cheese.

Notes

You can substitute broccoli with asparagus, zucchini, or bell peppers. For added crunch, top with toasted pine nuts or breadcrumbs. Consider using nutritional yeast for a dairy-free version or adding grilled chicken or shrimp for extra protein.
