Ingredients
  

For the salmon
  • 4 pieces Salmon fillets Fresh, skin-on is preferred for grilling
  • 2 tablespoons Olive oil For brushing the salmon
  • 1 teaspoon Smoky spices (like paprika or cumin) Adjust to taste
  • 1 teaspoon Salt To taste
  • 1 teaspoon Pepper To taste
For the mango salsa
  • 1 cup Mango (diced) Fresh and ripe mango preferred
  • 1 small Red onion (finely chopped) For flavor and color
  • 1/4 cup Cilantro (chopped) Fresh cilantro adds great flavor
  • 2 tablespoons Lime juice Freshly squeezed for best flavor

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. Brush the salmon fillets with olive oil and season them with smoky spices, salt, and pepper.
Cooking
  1. Grill the salmon for about 4-6 minutes per side, or until cooked through.
Making the Salsa
  1. In a bowl, combine diced mango, red onion, cilantro, and lime juice to make the salsa.
Serving
  1. Serve the grilled salmon topped with the mango salsa.

Notes

For leftovers, store salmon in the fridge for up to 3 days in an airtight container. Can also freeze for about a month. Reheat gently in the oven or grill to avoid rubbery texture.
