Ingredients
  

For the salmon
  • 2 pieces salmon fillets Preferably skinless
  • 1 tablespoon olive oil For grilling
  • Salt and pepper to taste To season the salmon
For the mango salsa
  • 1 piece ripe mango, diced Fresh and sweet for best flavor
  • 1/4 cup red onion, finely chopped Adds crunch and sweetness
  • 1 piece jalapeño, seeded and minced For heat; adjust according to preference
  • 1 tablespoon lime juice Freshly squeezed for brightness
  • Fresh cilantro, chopped (optional) For garnish and added flavor

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. Season the salmon fillets with salt, pepper, and olive oil.
Grilling
  1. Grill the salmon for about 4-5 minutes on each side, or until cooked through.
Making the Salsa
  1. In a bowl, combine the diced mango, red onion, jalapeño, lime juice, and cilantro.
Serving
  1. Top the grilled salmon with the mango salsa and serve warm.

Notes

To enhance flavors, serve with a slice of lime on the side and a sprinkle of fresh cilantro. If you have leftovers, store salmon and salsa in an airtight container in the fridge for up to 3 days.
