Preparation
- In a mixing bowl, combine the gluten-free flour, salt, and baking powder.
- Slowly add water and olive oil, mixing until a soft dough forms.
- Turn the dough onto a lightly floured surface and knead for about a minute until smooth.
- Divide the dough into small balls, then roll each ball into a flat circle, about 1/4 inch thick.
Cooking
- Heat a non-stick skillet over medium heat.
- Cook each flatbread for about 2-3 minutes on each side, or until lightly golden and cooked through.
Notes
Your easy gluten-free flatbread will keep for about 3-4 days in the fridge when wrapped tightly. To reheat, just throw it back on the skillet for a minute or two.
