Preparation
  1. In a mixing bowl, combine the gluten-free flour, salt, and baking powder.
  2. Slowly add water and olive oil, mixing until a soft dough forms.
  3. Turn the dough onto a lightly floured surface and knead for about a minute until smooth.
  4. Divide the dough into small balls, then roll each ball into a flat circle, about 1/4 inch thick.
Cooking
  1. Heat a non-stick skillet over medium heat.
  2. Cook each flatbread for about 2-3 minutes on each side, or until lightly golden and cooked through.

Notes

Your easy gluten-free flatbread will keep for about 3-4 days in the fridge when wrapped tightly. To reheat, just throw it back on the skillet for a minute or two.
