Preparation
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, beat butter and sugar until light and fluffy.
- Add egg and vanilla; mix well.
- Gradually add the dry ingredients. If the dough feels dry, add milk as needed.
- Chill the dough for 30 minutes.
- Roll dough between parchment to ¼-inch thickness.
- Cut shapes with cookie cutters and place on a lined baking sheet.
- Bake at 350°F (175°C) for 8–10 minutes or until edges are lightly golden.
- Cool completely before decorating.
Notes
Cookies are great for about a week at room temperature when stored in an airtight container. Feel free to freeze them too. If the dough sticks, sprinkle a bit more gluten-free flour while rolling.
