Ingredients
  

Dry Ingredients
  • 2 ½ cups gluten-free all-purpose flour (with xanthan gum)
  • 1 tsp baking powder
  • ½ tsp salt
Wet Ingredients
  • ¾ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1–2 tbsp milk (as needed)

Method
 

Preparation
  1. In a bowl, whisk together flour, baking powder, and salt.
  2. In another bowl, beat butter and sugar until light and fluffy.
  3. Add egg and vanilla; mix well.
  4. Gradually add the dry ingredients. If the dough feels dry, add milk as needed.
  5. Chill the dough for 30 minutes.
  6. Roll dough between parchment to ¼-inch thickness.
  7. Cut shapes with cookie cutters and place on a lined baking sheet.
  8. Bake at 350°F (175°C) for 8–10 minutes or until edges are lightly golden.
  9. Cool completely before decorating.

Notes

Cookies are great for about a week at room temperature when stored in an airtight container. Feel free to freeze them too. If the dough sticks, sprinkle a bit more gluten-free flour while rolling.
