Ingredients
  

Dry Ingredients
  • 1.5 cups gluten-free rolled oats
  • 0.5 cups almond flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 1 teaspoon cinnamon
Wet Ingredients and Add-Ins
  • 1 cup finely diced apples
  • 0.5 cups blueberries (fresh or frozen)
  • 0.33 cups maple syrup
  • 0.25 cups coconut oil, melted
  • 1 teaspoon vanilla extract
  • 2 large eggs

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line an 8×8 or 9×9 pan with parchment paper and give it a light grease.
  2. In a large bowl, whisk together the oats, almond flour, baking powder, salt, and cinnamon. Toss in the apples and blueberries, and stir to combine.
  3. In a separate bowl, whisk together the eggs, maple syrup, melted coconut oil, and vanilla until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until fully combined.
  5. Spread the mixture evenly into the prepared pan and press it down firmly.
Baking
  1. Bake for 25–30 minutes, or until golden on top and set in the center.
  2. Cool for 10 minutes in the pan, then transfer the bars to a wire rack to cool completely before slicing.

Notes

These bars can be stored in an airtight container in the fridge for up to a week or frozen for up to three months. To reheat, microwave for 10-15 seconds.
