Preparation
- Preheat your oven to 350°F (175°C). Line an 8×8 or 9×9 pan with parchment paper and give it a light grease.
- In a large bowl, whisk together the oats, almond flour, baking powder, salt, and cinnamon. Toss in the apples and blueberries, and stir to combine.
- In a separate bowl, whisk together the eggs, maple syrup, melted coconut oil, and vanilla until smooth.
- Pour the wet ingredients into the dry ingredients and mix until fully combined.
- Spread the mixture evenly into the prepared pan and press it down firmly.
Baking
- Bake for 25–30 minutes, or until golden on top and set in the center.
- Cool for 10 minutes in the pan, then transfer the bars to a wire rack to cool completely before slicing.
Notes
These bars can be stored in an airtight container in the fridge for up to a week or frozen for up to three months. To reheat, microwave for 10-15 seconds.
