  • 1 can Chili beans Use your preferred canned chili beans.
  • 1 lb Ground meat Optional; use beef, turkey, or omit for meatless version.
  • 1 can Diced tomatoes Choose diced tomatoes with herbs for added flavor.
  • 1 medium Onion Chopped.
  • 1 medium Bell pepper Diced; any color bell pepper will work.
  • 3 cloves Garlic Minced.
  • 2 tbsp Chili powder Adjust based on spice preference.
  • 1 tsp Cumin
  • 1 tsp Salt Adjust to taste.
  • 1 tsp Pepper Adjust to taste.
  • 1 cup Vegetable broth For meatless version.

Method
 

Preparation
  1. In a slow cooker, combine all the ingredients.
  2. If using ground meat, brown it in a skillet before adding.
  3. Stir well to combine.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  2. Adjust seasoning to taste before serving.
Serving
  1. Serve hot in bowls with your choice of fresh toppings such as shredded cheese, sour cream, diced onions, or chopped cilantro.
  2. Enjoy with cornbread, tortilla chips, or a slice of crusty bread.

Notes

For extra flavor, sauté onion and garlic before adding them to the slow cooker. Add other vegetables like zucchini or corn for added nutrition. Use canned beans for convenience, rinsing them first to reduce sodium. Adjust spices for desired heat. This chili is gluten-free with appropriate ingredients.
