  • 4 large large roasted green chiles Use fresh or canned, based on availability
  • 1 cup shredded cheese (cheddar or Monterey Jack) Feel free to mix different cheese types
  • 6 large large eggs
  • 1 cup milk
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9x13-inch baking dish.
  3. Layer the roasted green chiles in the bottom of the prepared dish, followed by half of the cheese.
  4. In a bowl, whisk together the eggs, milk, baking powder, salt, pepper, garlic powder, and onion powder.
  5. Pour the egg mixture over the chiles and cheese.
  6. Sprinkle the remaining cheese on top.
Baking
  1. Bake for about 30-40 minutes until the egg is set and the top is golden brown.
  2. Let cool slightly before serving.

Notes

Serve with sour cream, salsa, or fresh cilantro. Pair with a side salad for a complete meal. For variations, consider adding cooked sausage or diced ham.
