  • 2 pounds boneless skinless chicken thighs
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil divided
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder

Preparation
  1. Remove chicken from the refrigerator 20 minutes before cooking and pat completely dry with paper towels.
  2. Season both sides with salt; wait 2 minutes, then sprinkle remaining spices.
  3. Preheat oven to 400°F with the rack in center position.
  4. Brush a baking sheet with 1 tablespoon of olive oil; arrange chicken thighs with some space between each piece and drizzle with remaining oil.
Cooking
  1. Bake for 18 minutes, then flip the thighs and bake for an additional 14 minutes.
  2. Check internal temperature; it should reach 175°F at the thickest part.
  3. Tent with foil and let rest for 3 minutes before serving.

Notes

For extra flavor, marinate in your favorite dressing before cooking. For a spicy kick, add red pepper flakes before baking. Store leftovers in an airtight container for up to 3–4 days in the fridge, or freeze for up to three months.
