Preparation
- Remove chicken from the refrigerator 20 minutes before cooking and pat completely dry with paper towels.
- Season both sides with salt; wait 2 minutes, then sprinkle remaining spices.
- Preheat oven to 400°F with the rack in center position.
- Brush a baking sheet with 1 tablespoon of olive oil; arrange chicken thighs with some space between each piece and drizzle with remaining oil.
Cooking
- Bake for 18 minutes, then flip the thighs and bake for an additional 14 minutes.
- Check internal temperature; it should reach 175°F at the thickest part.
- Tent with foil and let rest for 3 minutes before serving.
Notes
For extra flavor, marinate in your favorite dressing before cooking. For a spicy kick, add red pepper flakes before baking. Store leftovers in an airtight container for up to 3–4 days in the fridge, or freeze for up to three months.
