Ingredients
  

Dough Ingredients
  • 1 cup gluten-free 1:1 flour – like King Arthur’s
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1 cup plain Greek yogurt
Toppings and Coating
  • 2 tablespoons Everything bagel seasoning
  • Olive oil spray
  • Egg white or water – for coating the bagels so the seasoning sticks to them

Method
 

Preparation
  1. In a medium-sized bowl, combine the flour, baking powder, and salt to create your gluten-free self-rising flour.
  2. Add the Greek yogurt and mix well until you have a thick, chunky dough.
  3. Sprinkle a little flour on your hands and the dough, mixing and kneading in the bowl until a smooth ball forms (about 1 minute).
  4. Turn out the dough onto a well-floured surface and knead for another minute.
  5. Scoop about 1 heaping tablespoon (about 1 ounce) of dough into your hands, roll into a ball, and place it on a plate. Repeat until you have 12-13 mini bagels.
Cooking
  1. Preheat the air fryer to 350°F.
  2. Lightly spray or brush each bagel ball with olive oil. Roll them in the Everything seasoning or sprinkle it on top for a lighter flavor.
  3. Spray the air fryer basket with olive oil and place the bagels in a single layer, ensuring they don’t touch (1 inch apart is best!).
  4. Cook for 10-12 minutes. Check the inside after 10 minutes by pulling one apart. If it’s still doughy, give it another minute or two.
  5. Remove the bagels from the air fryer, place them on a plate, and let them cool for 5 minutes.

Notes

Serve with butter or cream cheese and enjoy! For a sweet twist, drizzle honey on top, or pair with fresh fruit for brightness. Store in an airtight container in the fridge for up to 3 days or freeze for about a month.
