  • 1 pound sausage, sliced
  • 1 pound chicken breast, cubed
  • 1 pound shrimp, peeled and deveined You can use frozen shrimp for convenience.
  • 1 medium bell pepper, chopped
  • 1 medium onion, chopped
  • 2 cups chicken broth
  • 1 can diced tomatoes with green chilies
  • 2 cups uncooked rice
  • 2 teaspoons Cajun seasoning Adjust the spice level to taste.

Method
 

Preparation
  1. In a large crockpot, combine the sausage, chicken, shrimp, bell pepper, onion, chicken broth, diced tomatoes, rice, Cajun seasoning, and salt and pepper.
  2. Stir until well combined.
  3. Cover and cook on low for 6-8 hours or until the rice is cooked and the chicken is tender.
  4. Serve hot and enjoy your hearty meal!

Notes

This dish keeps well in the fridge for up to 3-4 days. For longer storage, freeze for up to 3 months. Reheat in the microwave or on the stove with a splash of broth.
