  • 6 large large eggs Make sure to beat them well for fluffiness.
  • 0.5 cup full-fat Greek yogurt (unsweetened and plain) Greek yogurt adds creaminess to the bread.
  • 0.25 cup melted butter or coconut oil Choose based on preferences.
Dry Ingredients
  • 1 tablespoon baking powder Helps the bread rise.
  • 0.25 teaspoon salt Enhances flavor.
  • 0.5 teaspoon xanthan gum or psyllium husk powder For texture.
  • 0.5 cup finely ground almond flour (optional) Substitute with coconut flour if allergic.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, whisk together the eggs and Greek yogurt until smooth.
  3. Stir in the melted butter, baking powder, salt, xanthan gum, and almond flour until well combined.
  4. Pour the batter into your prepared loaf pan.
  5. Bake for about 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let it cool a bit, then slice and enjoy!

Notes

This bread can be served warm with butter, sliced and toasted with honey, or used as a base for sandwiches.
