  • 1 large English cucumber or 2 Persian cucumbers, thinly sliced
  • 1 pint cherry or grape tomatoes, halved
  • 8 oz mozzarella pearls or cubed fresh mozzarella
  • ¼ cup red onion, thinly sliced
  • ¼ cup fresh basil leaves, torn or chopped
Dressing
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze or reduction
  • to taste Salt and freshly ground black pepper
  • to taste crushed red pepper flakes (optional) For a little kick

Method
 

Preparation
  1. Slice the cucumbers, halve the tomatoes, and thinly slice the red onion.
  2. In a large bowl, combine the sliced cucumber, halved tomatoes, mozzarella, onion, and basil.
  3. Drizzle everything with olive oil and balsamic glaze. Season with salt, pepper, and optional red pepper flakes for heat.
  4. Toss gently until all the ingredients are coated in that luscious dressing.
  5. Serve immediately, or give it a chill in the fridge for 15–30 minutes to meld those flavors beautifully.

Notes

For heartier bites, slice thicker cucumbers; use heirloom tomatoes for enhanced flavor and color. Substitute scallions for a milder onion taste.
