- Slice the cucumbers, halve the tomatoes, and thinly slice the red onion.
- In a large bowl, combine the sliced cucumber, halved tomatoes, mozzarella, onion, and basil.
- Drizzle everything with olive oil and balsamic glaze. Season with salt, pepper, and optional red pepper flakes for heat.
- Toss gently until all the ingredients are coated in that luscious dressing.
- Serve immediately, or give it a chill in the fridge for 15–30 minutes to meld those flavors beautifully.
Notes
For heartier bites, slice thicker cucumbers; use heirloom tomatoes for enhanced flavor and color. Substitute scallions for a milder onion taste.
