Ingredients
  

Potato Skin Ingredients
  • 12 pieces Mini potatoes Small-sized potatoes preferred for optimal skin.
  • 2 tablespoons Olive oil For coating.
  • 1 teaspoon Salt Adjust according to taste.
  • 1 teaspoon Pepper Freshly ground is recommended.
Filling Ingredients
  • 1 cup Cheddar cheese Shredded.
  • 1/2 cup Bacon bits Crispy, for topping.
  • 1/2 cup Sour cream For serving.
  • 2 tablespoons Chives Chopped, for garnish.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the mini potatoes, then poke them with a fork.
  3. Coat the potatoes with olive oil, salt, and pepper.
Baking
  1. Bake in the oven for about 20-25 minutes or until tender.
  2. Let the potatoes cool slightly, then cut them in half and scoop out some of the flesh.
  3. Fill the skins with cheddar cheese and bacon bits.
  4. Return to the oven and bake until the cheese is melted, about 10 minutes.
Serving
  1. Top with sour cream and chives before serving.

Notes

Store leftovers in an airtight container in the fridge for 3-5 days. Reheat in the oven for 5-10 minutes for best results.
