Preparation
- Preheat the oven to 400°F (200°C).
- Wash and scrub the mini potatoes, then poke them with a fork.
- Coat the potatoes with olive oil, salt, and pepper.
Baking
- Bake in the oven for about 20-25 minutes or until tender.
- Let the potatoes cool slightly, then cut them in half and scoop out some of the flesh.
- Fill the skins with cheddar cheese and bacon bits.
- Return to the oven and bake until the cheese is melted, about 10 minutes.
Serving
- Top with sour cream and chives before serving.
Notes
Store leftovers in an airtight container in the fridge for 3-5 days. Reheat in the oven for 5-10 minutes for best results.
