  • 1 lb boneless, skinless chicken breasts
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 4 cups chicken broth
  • 1 small onion, diced
  • 3 cloves garlic, minced
Spices and Seasonings
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
Creamy Ingredients
  • 4 oz cream cheese, softened
  • 1/2 cup heavy cream
For Serving
  • Fresh cilantro, chopped for garnish
  • Lime wedges for serving

Method
 

Preparation
  1. Place the chicken breasts in the crockpot.
  2. Add the white beans, green chilies, chicken broth, diced onion, minced garlic, and all the seasonings.
Cooking
  1. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked.
  2. Remove the chicken breasts from the crockpot, shred them using two forks, and return them to the pot.
  3. Stir in the cream cheese and heavy cream until the cream cheese melts and the chili becomes creamy.
Serving
  1. Serve hot, garnished with fresh cilantro and a squeeze of lime juice.

Notes

For a bit more heat, add a diced jalapeƱo or some hot sauce. Use rotisserie chicken for even quicker prep. If you prefer a thicker chili, you can mash some of the beans before adding them to the pot. Vegetarian option: replace the chicken with cooked quinoa or additional beans, adjusting the broth accordingly.
