Ingredients
  

Main Ingredients
  • 1 lb ground beef Can substitute with ground turkey or meat substitute for a lighter option.
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 1 cup salsa Use spicy salsa for extra heat.
  • 2 cups shredded cheese Mix different types for more flavor.
For Layering and Serving
  • Tortilla chips or tortillas For layering.
  • Sour cream For serving, optional.
  • Chopped green onions For serving, optional.

Method
 

Preparation
  1. In a skillet, brown the ground beef over medium heat. Drain excess fat.
  2. In a large bowl, combine the cooked beef, black beans, corn, taco seasoning, and salsa.
Assembly and Cooking
  1. In a crockpot, layer tortilla chips or tortillas, then spoon on a layer of the beef mixture, followed by a layer of cheese. Repeat layers until all ingredients are used, finishing with cheese on top.
  2. Cook on low for 4-6 hours or high for 2-3 hours, until heated through and cheese is melted.
Serving
  1. Serve with sour cream and green onions, if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for up to 3 months. Reheat in the microwave or crockpot until warm and gooey.
