Preparation
- In a skillet, brown the ground beef over medium heat. Drain excess fat.
- In a large bowl, combine the cooked beef, black beans, corn, taco seasoning, and salsa.
Assembly and Cooking
- In a crockpot, layer tortilla chips or tortillas, then spoon on a layer of the beef mixture, followed by a layer of cheese. Repeat layers until all ingredients are used, finishing with cheese on top.
- Cook on low for 4-6 hours or high for 2-3 hours, until heated through and cheese is melted.
Serving
- Serve with sour cream and green onions, if desired.
Notes
Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for up to 3 months. Reheat in the microwave or crockpot until warm and gooey.
