  • 1 lb Kielbasa sausage Cut into bite-sized pieces
  • 1 lb Fresh green beans Trimmed
  • 1 lb Baby potatoes Halved
  • 1 medium Onion Chopped
  • 2 cloves Garlic Minced
  • 2 cups Chicken broth Or vegetable broth if preferred
  • 1 tsp Salt Adjust to taste
  • 1 tsp Pepper Adjust to taste
  • 2 tbsp Olive oil For drizzling

Method
 

Preparation
  1. Cut the kielbasa into bite-sized pieces and place them in the crockpot.
  2. Add trimmed green beans and halved baby potatoes.
  3. Chop the onion and mince the garlic; add both to the crockpot.
  4. Pour chicken broth over the mixture and season with salt and pepper.
  5. Drizzle with olive oil.
  6. Stir to combine all ingredients.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender and the flavors are well blended.

Notes

Leftovers can be kept in the fridge for up to 4 days or frozen for up to 3 months. For best flavor, consider sautéing garlic and onion before adding them to the crockpot.
