  • 4 boneless, skinless chicken breasts
  • 1/2 cup garlic butter (melted) Use store-bought or homemade garlic butter.
  • 2 cups mixed vegetables (such as carrots, broccoli, and bell peppers) Feel free to use seasonal vegetables.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper Adjust according to your preference.
  • 1/2 cup chicken broth

Method
 

Preparation
  1. Place the chicken breasts in the crockpot.
  2. In a bowl, mix together the melted garlic butter, garlic powder, onion powder, salt, pepper, and chicken broth.
  3. Pour the mixture over the chicken.
  4. Add the mixed vegetables on top of the chicken.
Cooking
  1. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through and tender.
  2. Serve warm, spooning the garlic butter sauce over the chicken and vegetables.

Notes

For a richer sauce, consider adding a splash of cream at the end. Store leftovers in the fridge for 3-4 days or freeze for up to 3 months.
