  • 2 cups cooked chicken, shredded Use rotisserie chicken for quicker prep.
  • 3 cups sweet corn Can be fresh or frozen.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth Substitute with vegetable broth if desired.
  • 2 cups heavy cream Add just before serving for best flavor.
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon paprika For added flavor.
  • 1 cup shredded cheese (optional) Add for a creamy texture.
  • Bacon bits (optional) For topping.
  • Sour cream (optional) For serving.

Method
 

Preparation
  1. In a slow cooker, combine the shredded chicken, corn, onion, garlic, chicken broth, salt, pepper, and paprika. Give it a good stir!
  2. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
Serving
  1. About 30 minutes before serving, stir in the heavy cream and cheese if using.
  2. Serve with crispy bacon bits and a dollop of sour cream on top.

Notes

For additional flavor, consider adding diced potatoes or bell peppers. Spice it up with a pinch of cayenne pepper if desired. Store in the fridge for 3-4 days or freeze for up to 3 months.
