  • 2 lbs chicken breasts Boneless, skinless
  • 1 cup chicken broth Low sodium preferred
  • 1/2 cup butter Melted
  • 2 tablespoons Cajun seasoning Adjust based on heat preference
  • 1 onion, chopped
  • 4 cloves garlic, minced Toasting garlic optional for flavor
  • 1 cup heavy cream Or substitute with half and half
  • Salt and pepper to taste
  • Cooked rice or crusty bread for serving

Method
 

Preparation
  1. Place the chicken breasts in the crockpot.
  2. In a separate bowl, mix together the chicken broth, melted butter, Cajun seasoning, chopped onion, and minced garlic.
  3. Pour the mixture over the chicken in the crockpot.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through.
  5. Once done, shred the chicken in the sauce and stir in heavy cream.
  6. Season with salt and pepper to taste.
  7. Serve over rice or with crusty bread.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days or freeze for later. Reheat on the stove or in the microwave.
