Method
Season the Chicken
- Rub the chicken breasts with Cajun seasoning, garlic powder, paprika, salt, and pepper. Marinate for 15–20 minutes if possible.
Combine in the Slow Cooker
- Place the seasoned chicken in your slow cooker with sliced bell peppers, onion, and chicken broth. Cook on low for 6–7 hours or high for 3–4 hours.
Shred the Chicken
- Once cooked, remove and shred the chicken with forks, then return it to the slow cooker.
Add Cream
- Stir in cream cheese and Parmesan. Cook for another 10–15 minutes until creamy.
Cook the Pasta
- Prepare pasta according to package instructions until al dente, drain, and stir into the slow cooker mixture.
Serve
- Garnish with fresh parsley, extra cheese, and optional red pepper flakes before serving.
Notes
For extra creaminess, consider adding a splash of heavy cream right before serving. For a veggie boost, toss in some spinach during the last 10 minutes of cooking for added nutrients and color. If you're short on time, use pre-cooked chicken to cut down on the cooking time.
