Ingredients
  

For the Chicken
  • 1.5 pounds boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon paprika
  • 0.5 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
For the Vegetables
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 0.5 yellow onion sliced
For the Sauce
  • 3 cups low-sodium chicken broth
  • 8 ounces cream cheese, cubed
  • 1 cup shredded Parmesan cheese
For the Pasta
  • 12 ounces penne or rotini pasta
For Garnish
  • Fresh parsley for garnish
  • Extra Parmesan cheese
  • Crushed red pepper flakes optional

Method
 

Season the Chicken
  1. Rub the chicken breasts with Cajun seasoning, garlic powder, paprika, salt, and pepper. Marinate for 15–20 minutes if possible.
Combine in the Slow Cooker
  1. Place the seasoned chicken in your slow cooker with sliced bell peppers, onion, and chicken broth. Cook on low for 6–7 hours or high for 3–4 hours.
Shred the Chicken
  1. Once cooked, remove and shred the chicken with forks, then return it to the slow cooker.
Add Cream
  1. Stir in cream cheese and Parmesan. Cook for another 10–15 minutes until creamy.
Cook the Pasta
  1. Prepare pasta according to package instructions until al dente, drain, and stir into the slow cooker mixture.
Serve
  1. Garnish with fresh parsley, extra cheese, and optional red pepper flakes before serving.

Notes

For extra creaminess, consider adding a splash of heavy cream right before serving. For a veggie boost, toss in some spinach during the last 10 minutes of cooking for added nutrients and color. If you're short on time, use pre-cooked chicken to cut down on the cooking time.
