Preparation
  1. Place the chicken breasts in the crock pot.
  2. Add chicken broth, uncooked rice, onion, garlic, paprika, salt, and pepper. Stir to combine everything.
  3. Cover and cook on low for 4-6 hours or until the chicken is cooked through and the rice is tender.
  4. Before serving, shred the chicken, add the cheese, and mix well.
  5. If using, stir in any additional vegetables and let it cook for another 10-15 minutes until heated through.
  6. Serve straight from the crock pot to the plate, and enjoy!

Notes

Leftovers keep well in the fridge for 3-4 days. For freezing, scoop individual portions into airtight containers and store for up to 3 months. Reheat in the microwave or on the stove, adding a splash of broth to revive creaminess. Pro tip: Toast the garlic before adding it for extra flavor.
