  • 1 pound beef (thinly sliced)
  • 1 cup bell peppers (sliced)
  • 1 cup onions (sliced)
  • 1 cup mushrooms (sliced)
  • 2 cups cheese tortellini (fresh or frozen)
  • 1 cup cream cheese
  • 1 cup beef broth
  • 1 cup shredded cheese (provolone or mozzarella)

Method
 

Cooking
  1. In the crock pot, combine the sliced beef, bell peppers, onions, mushrooms, and beef broth.
  2. Cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender.
  3. About 30 minutes before serving, stir in the cream cheese and shredded cheese until melted and well combined.
  4. Add the cheese tortellini and cook for an additional 30 minutes until heated through.
  5. Season with salt and pepper to taste and serve warm.

Notes

For super tender beef, opt for the low-and-slow option. You can use chicken as a meat substitute or add spinach or zucchini for extra nutrition. Store leftovers in an airtight container for up to 3-4 days or freeze for up to 3 months.
