  • 1 pound chicken breasts
  • 1 tablespoon Cajun seasoning
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 8 ounces pasta (e.g., penne or rotini)
  • 1 cup bell peppers (sliced)
  • 1 cup onion (chopped)
  • 2 cloves garlic (minced)
  • 1 cup grated Parmesan cheese

Method
 

Preparation
  1. Place the chicken breasts in the slow cooker and sprinkle with Cajun seasoning.
  2. Add the heavy cream, chicken broth, bell peppers, onion, and minced garlic.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours.
Cooking Pasta
  1. About 30 minutes before serving, cook the pasta according to package instructions.
Assembly
  1. Once the chicken is cooked, shred it with two forks and stir in the cooked pasta and Parmesan cheese.
  2. Mix well and season with salt and pepper to taste.
  3. Serve hot, garnished with chopped parsley.

Notes

Store any leftovers in an airtight container in the fridge for about 3-4 days. If you want to keep it longer, pop it in the freezer for about 2-3 months. Reheat in the microwave or on the stovetop, adding a splash of water or broth to revive the creamy texture. Enjoy with a side of garlic bread!
