  • 6 pieces boneless, skinless chicken breasts
  • 1 package (8 oz) cream cheese, softened
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 0.5 cup unsalted butter
  • 1 package (0.7 oz) dry Italian salad dressing mix
  • 0.5 cup chicken broth
  • 8 oz angel hair pasta

Method
 

Preparation
  1. Place the chicken breasts in the bottom of the crock pot and season with salt and black pepper.
  2. In a medium saucepan, melt the butter over low heat.
  3. Add the cream cheese, cream of chicken soup, Italian dressing mix, and chicken broth. Whisk until smooth and thoroughly combined.
  4. Pour the sauce mixture evenly over the chicken breasts in the crock pot.
  5. Cover and cook on low for 4 hours, or until the chicken is tender and cooked through.
  6. About 15 minutes before serving, cook the angel hair pasta according to package directions. Drain well.
  7. Serve the creamy chicken over the angel hair pasta and spoon extra sauce over the top.

Notes

For a healthier twist, use low-fat cream cheese or substitute the cream of chicken soup with a homemade version. For added texture, sprinkle with toasted pine nuts or crispy breadcrumbs before serving.
