  • 2 cups grated zucchini (about 2 medium), excess moisture squeezed out Squeeze out as much moisture as possible for better texture.
  • 1 cup breadcrumbs (plain or seasoned) Plain or seasoned breadcrumbs can be used.
  • ½ cup grated Parmesan cheese Adds a nice flavor to the bites.
  • 2 large eggs Acts as a binding agent.
  • 2 cloves garlic, minced Fresh garlic enhances the flavor.
  • ¼ cup finely chopped onion Adds moisture and flavor.
  • 2 tablespoons chopped fresh parsley (or 1 teaspoon dried) Use fresh or dried herbs for flavor.
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon Italian seasoning (optional) Feel free to omit this if desired.
  • to taste Cooking spray or olive oil (for baking) For preventing sticking.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper and spray with cooking spray or drizzle with olive oil.
  3. In a large bowl, mix together grated zucchini, breadcrumbs, Parmesan cheese, eggs, minced garlic, chopped onion, parsley, salt, pepper, and Italian seasoning until well combined.
  4. Scoop out small portions of the mixture and roll into balls about 1 to 1½ inches in size.
  5. Place the balls evenly spaced on your baking sheet.
Cooking
  1. Bake for 20–25 minutes, flipping halfway through, until golden brown and slightly crispy.
  2. Let them cool slightly before serving.
Serving
  1. Serve warm with marinara sauce, ranch dressing, or any dipping sauce of your choice.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in the oven to regain crispiness. Experiment with flavor by adding herbs or spices as desired.
