Ingredients
  

For the patties
  • 2 medium sweet potatoes peeled and cubed
  • 1 cup red lentils cooked and drained
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup breadcrumbs
  • Oil for frying
For the avocado cilantro sauce
  • 1 each avocado
  • 1/4 cup chopped cilantro
  • 1 each lime juiced
  • Salt to taste

Method
 

Preparation
  1. Cook the lentils in a pot of boiling water until tender, about 15-20 minutes. Drain and set aside.
  2. Meanwhile, peel and cube the sweet potatoes. Boil them until soft, about 10-15 minutes. Drain and mash.
  3. In a mixing bowl, combine mashed sweet potatoes, cooked lentils, chopped onion, minced garlic, cumin, paprika, salt, pepper, and breadcrumbs. Mix until well combined.
  4. Form the mixture into patties.
Cooking
  1. Heat oil in a frying pan over medium heat. Fry the patties until crispy and golden brown on both sides, about 4-5 minutes per side.
Making the Sauce
  1. To make the avocado sauce, blend avocado, cilantro, lime juice, and salt until smooth.
Serving
  1. Serve the crispy patties with the creamy avocado cilantro sauce.

Notes

Chill your patties briefly before frying to help them hold their shape. You can also use leftover sweet potatoes for added flavor. Adjust seasoning to your taste.
