Ingredients
  

For the chicken
  • 1 lb chicken breast, cut into bite-sized pieces
  • 1/2 cup cornstarch for coating
  • 1/4 cup sesame oil for frying
  • 1/3 cup soy sauce for glaze
  • 2 tablespoons honey for glaze
  • 2 cloves garlic, minced adds flavor
  • 1 teaspoon ginger, minced adds flavor
  • Sesame seeds for garnish
For the fried rice
  • 2 cups cooked rice day-old rice works best
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 eggs beaten
  • 2 tablespoons green onions, chopped for garnish

Method
 

Preparation
  1. Toss the chicken pieces in cornstarch until fully coated.
  2. In a pan, heat sesame oil over medium heat.
Cooking Chicken
  1. Fry the chicken until golden brown and crispy, about 5-7 minutes.
  2. In a bowl, mix soy sauce, honey, garlic, and ginger. Pour this over the chicken and stir to coat.
Cooking Fried Rice
  1. In another pan, heat a bit of oil and add the mixed vegetables; sauté for 2-3 minutes.
  2. Push the veggies to one side, pour the beaten eggs into the pan, and scramble.
  3. Add the cooked rice and stir everything together.
Serving
  1. Serve the crispy sesame chicken over the fried rice, garnished with sesame seeds and green onions.

Notes

This dish stays good in the fridge for up to 3 days. To freeze, it performs nicely for up to a month.
