  • 4 pieces boneless chicken breasts Pound to 1-inch thickness
  • 1 cup finely grated Parmesan cheese
  • 1 cup breadcrumbs Use Panko for extra crunch
  • 2 large eggs Beaten for breading
  • 4 cloves garlic Minced
  • 1 cup heavy cream
  • 2 tbsp olive oil or butter For sautéing garlic
  • Salt and pepper To taste
  • Fresh parsley For garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Place chicken breasts between plastic wrap and pound to about 1-inch thickness.
  3. Season both sides of the chicken with salt and pepper.
  4. Set up a breading station: one bowl with beaten eggs, another with a mixture of breadcrumbs and Parmesan.
  5. Dip each chicken piece in egg, then coat with breadcrumb mixture, pressing to adhere.
  6. Arrange the breaded chicken on a greased baking sheet.
Cooking
  1. Bake for 25-30 minutes until golden brown and the inside hits 165°F (75°C).
  2. For extra crispy goodness, broil chicken for 2-3 minutes, watching closely.
  3. In a saucepan, melt butter or heat olive oil over medium heat.
  4. Sauté minced garlic until fragrant and golden, about 1-2 minutes.
  5. Pour in heavy cream and let it simmer for 5 minutes, stirring continuously.
  6. Season the garlic sauce with salt, pepper, and optional red pepper flakes.

Notes

Store leftovers in the fridge for about 3-4 days. Reheat in oven with a splash of cream.
