  • 4 cutlets chicken cutlets
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 2 eggs eggs beaten
  • to taste salt and pepper
  • as needed olive oil for frying

Method
 

Preparation
  1. In a bowl, mix breadcrumbs, Parmesan cheese, basil, salt, and pepper.
  2. In another bowl, beat the eggs.
  3. Dip each chicken cutlet in the egg, then coat with the breadcrumb mixture.
Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Fry each cutlet for about 4-5 minutes per side or until golden brown.
  3. Serve hot and enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet to restore crispiness.
