  • 2 cups broccoli florets Fresh or frozen broccoli can be used.
  • 2 cups cauliflower florets Fresh or frozen cauliflower can be used.
  • 2 cups sliced carrots Can be substituted with other root vegetables.
Casserole Base
  • 1 can mushroom soup (10.5 oz) Can be substituted with cream of chicken or a homemade white sauce.
  • 1 cup shredded cheddar cheese Feel free to use different types of cheese for variation.
  • 1 cup milk Dairy or non-dairy milk can be used.
  • 1 teaspoon garlic powder Adjust to taste.
  • 1 teaspoon onion powder Adjust to taste.
  • Salt and pepper to taste Use as desired for seasoning.
Topping
  • 3 cups tater tots Can use frozen tater tots for convenience.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the broccoli, cauliflower, and sliced carrots.
  3. In another bowl, mix together the mushroom soup, cheddar cheese, milk, garlic powder, onion powder, salt, and pepper.
  4. Pour the soup mixture over the vegetables and stir until everything is well combined.
  5. Transfer the mixture to a greased casserole dish and spread it evenly.
  6. Top with tater tots, making sure they are nicely scattered.
Baking
  1. Bake for 30-35 minutes or until the tater tots are golden brown and the casserole is bubbly.
