  • 8 oz spaghetti or fettuccine Choose your favorite pasta type.
  • 1 cup ripe tomatoes (diced) Fresh tomatoes are recommended for vibrant flavor.
  • 1 cup heavy cream Can substitute with half-and-half for a lighter version.
  • 4 cloves fresh garlic (minced) Adjust according to preference for garlic flavor.
  • 2 tbsp extra virgin olive oil For sautéing the garlic.
  • 1/4 cup fresh basil (chopped) Use fresh for best flavor.
  • Salt and pepper to taste Essential for seasoning.

Method
 

Cooking the Pasta
  1. Boil salted water in a large pot and cook pasta according to package instructions until al dente. Drain and set aside.
Making the Sauce
  1. In a large skillet, heat olive oil over medium heat. Sauté minced garlic until golden brown.
  2. Add diced tomatoes, salt, and pepper. Simmer for about 5 minutes.
  3. Lower the heat and stir in heavy cream until well blended.
Combining
  1. Toss cooked pasta in the sauce until evenly coated.
  2. Serve topped with fresh basil and optional grated Parmesan cheese.

Notes

This pasta keeps well in the fridge for up to 3 days in an airtight container. Can freeze for up to 2 months, reheating gently with a splash of cream or water.
