Preparation
- Preheat the oven to 400°F (200°C).
- Season the chicken thighs generously with salt and pepper.
Searing
- In a large oven-safe skillet, heat olive oil over medium-high heat.
- Sear the chicken thighs on both sides until golden brown, about 5 minutes per side.
- Remove the chicken from the skillet and set aside.
Making the Sauce
- In the same skillet, add minced garlic and sauté for about 30 seconds.
- Pour in the heavy cream and bring to a simmer.
- Stir in the Parmesan cheese until melted and smooth.
- Return the chicken thighs to the skillet, spooning some sauce over them.
Baking
- Transfer the skillet to the preheated oven and bake for 25-30 minutes or until the chicken is cooked through.
- Garnish with chopped parsley before serving.
Notes
For even juicier meat, use bone-in thighs. You can add a splash of white wine for extra flavor, or use half-and-half for a lighter version. Don’t forget to taste the sauce before serving and pair with garlic bread or crusty rolls to soak up the creamy goodness.
