Ingredients
  

Pasta and Sauce
  • 12 ounces Spaghetti (gluten-free if needed) You can use any pasta type you prefer.
  • 1 cup Heavy cream (or dairy-free alternative) Adjust the amount based on your preference for creaminess.
  • 1 tablespoon Lemon zest Freshly grated for best flavor.
  • 2 tablespoons Lemon juice Add more for extra zestiness.
  • 1/4 cup Fresh parsley Chopped, for garnish.
  • 1/2 cup Shredded Parmesan (or dairy-free alternative) Optional, can substitute with nutritional yeast.
  • 1 teaspoon Salt Adjust to taste.
  • 1/2 teaspoon Black pepper Freshly ground for best flavor.

Method
 

Cooking the Pasta
  1. Cook spaghetti according to package instructions until al dente.
Making the Sauce
  1. In a saucepan, heat the cream over medium heat.
  2. Stir in lemon juice and zest, and season with salt and pepper.
Combining & Serving
  1. Drain the spaghetti and add it to the sauce, tossing to combine.
  2. Serve topped with fresh parsley and Parmesan.

Notes

Store leftovers in an airtight container in the fridge for about 3-4 days. Reheat gently on the stove with a splash of water or extra cream.
