  • 2 cups gluten-free vegetable broth
  • 1 cup coconut milk Can substitute with almond milk or cashew cream
  • 1 large onion, chopped
  • 2 cloves garlic, minced Toasting the garlic enhances flavor
  • 3 cups mixed vegetables (carrots, potatoes, celery) Any fresh or frozen vegetables can work
  • 1 teaspoon dried thyme
  • to taste Salt and pepper Adjust seasoning as needed
  • to garnish Fresh parsley

Method
 

Preparation
  1. In a slow cooker, combine the vegetable broth, coconut milk, onion, garlic, and mixed vegetables.
  2. Add dried thyme, salt, and pepper.
  3. Stir well, cover, and cook on low for 6-8 hours or high for 3-4 hours.
  4. Before serving, stir the soup and adjust seasoning if necessary.
  5. Garnish with fresh parsley and enjoy!

Notes

This soup keeps well in the fridge for about 3-4 days. For longer storage, freeze in individual servings in airtight containers.
