- Cook the spiral pasta according to package instructions; drain and set aside.
- Season the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium-high heat.
- Add the chicken and sear until golden brown and cooked through, about 6-8 minutes per side. Remove the chicken and slice it.
- In the same skillet, add the minced garlic and sauté until fragrant, about 1 minute.
- Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and smooth.
- Add the cooked pasta and sliced chicken back to the skillet; toss to coat in the sauce.
- Garnish with chopped parsley before serving.
Notes
This dish keeps well in the fridge for about 3-4 days. Store in an airtight container. Consider prepping components separately for make-ahead meals.
