  • 2 pieces boneless, skinless chicken breasts
  • to taste Salt and pepper
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese Use freshly grated for best texture.
  • 8 ounces spiral pasta Can substitute with other pasta shapes.
  • to garnish Chopped parsley For serving.

  1. Cook the spiral pasta according to package instructions; drain and set aside.
  2. Season the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the chicken and sear until golden brown and cooked through, about 6-8 minutes per side. Remove the chicken and slice it.
  4. In the same skillet, add the minced garlic and sauté until fragrant, about 1 minute.
  5. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and smooth.
  6. Add the cooked pasta and sliced chicken back to the skillet; toss to coat in the sauce.
  7. Garnish with chopped parsley before serving.

Notes

This dish keeps well in the fridge for about 3-4 days. Store in an airtight container. Consider prepping components separately for make-ahead meals.
