Preparation
- Slice chicken breasts in half horizontally or pound to even thickness. Season with salt, pepper, and Italian seasoning.
- Heat olive oil in a skillet over medium heat. Sear chicken until golden and cooked through, about 4–5 minutes per side.
- Transfer cooked chicken to a plate and set aside.
- Lower heat, add butter and garlic, and sauté until fragrant.
- Pour in cream and stir to deglaze the pan. Add Parmesan and simmer until thickened.
- Return chicken to skillet, simmer for 2–3 minutes to heat through and coat with sauce.
Notes
Serve with steamed vegetables, over mashed potatoes or fettuccine, and don’t forget some crusty bread for mopping up the sauce. For leftovers, store in an airtight container in the fridge for up to 3 days or freeze for about 3 months.
