- In a large pot, heat some oil over medium heat and cook the minced garlic until fragrant.
- Add the chicken breasts and cook until browned and cooked through. Remove and slice.
- Add the chicken broth to the pot and bring to a boil.
- Stir in the ramen noodles and mixed vegetables, cooking until the noodles are tender.
- Lower the heat and add the heavy cream and soy sauce, stirring until well combined.
- Season with salt and pepper to taste.
- Serve hot, topped with sliced chicken and green onions.
Notes
This ramen keeps well in the fridge for up to 3 days. For freezing, it will last about a month and should be reheated on low heat with a splash of broth or water to revive the creamy texture.
