  • 4 cups chicken broth
  • 2 packs ramen noodles
  • 2 tablespoons garlic, minced
  • 1 cup heavy cream
  • 1 cup mixed vegetables (e.g., bell peppers, carrots, broccoli)
  • 2 tablespoons soy sauce

Method
 

Preparation
  1. In a large pot, heat some oil over medium heat and cook the minced garlic until fragrant.
  2. Add the chicken breasts and cook until browned and cooked through. Remove and slice.
  3. Add the chicken broth to the pot and bring to a boil.
  4. Stir in the ramen noodles and mixed vegetables, cooking until the noodles are tender.
  5. Lower the heat and add the heavy cream and soy sauce, stirring until well combined.
  6. Season with salt and pepper to taste.
  7. Serve hot, topped with sliced chicken and green onions.

Notes

This ramen keeps well in the fridge for up to 3 days. For freezing, it will last about a month and should be reheated on low heat with a splash of broth or water to revive the creamy texture.
